Vegan Taco is one of Chef Ned’s signature appetizers. Using cabbage, radish and mustard microgreens from the Urban Cultivator, these tacos are great for sharing and perfect for your next party.

Ingredients
For the Filling
- 1 Diced Avocado
- 3 tbsp Radish
- 3 tbsp Cabbage
- 3 tbsp Mustard Cress
- Fresh Black Pepper and Sea Salt to Taste
- 1 tbsp Diced Jalapeno
- 1 tbsp Diced Cucumber
- 1 tbsp Diced Red Pepper
- 1 tbsp Diced Yellow Pepper
- 1 tsp Lime Juice
- 1 tsp Lemon Juice
Other
- 4 Taco Shells
- 2 Cherry Tomatoes Halved
- Pinch of Togarashi
- 1 Sliced Radish
Directions
- Add Filling ingredients to a bowl and gently mix.
- Equally divide mixed ingredients into taco shells and prop up on the halved cherry tomatoes.
- Sprinkle with togarashi and thinly sliced radish.
