Nutritious Pesto with micro-basil

You might have tried pesto with regular vegetables, but it’s time to make a pesto with micro-basil. Urban Cultivator makes growing greens and herbs child’s play! With micro-basil, your pesto will be up to 40 times more nutrient-packed than when using store-bought. Here’s a recipe for micro-enhanced pesto!

Ingredients:

  • 2 cups micro-basil
  • 2 garlic cloves
  • 2-3 tbsp olive oil
  • 1 tbsp lemon juice 
  • 1/2 cup parmesan cheese
  • 1/4 cup pepitas, walnuts, or roasted pine nuts
  • Salt and black pepper to taste

 

Preparation:

There are two ways you can make this wonderful pesto.

  1. The Machine Way: Put the micro-basil, olive oil, garlic, and lemon juice in a blender and make a paste. Then, you can add salt and pepper and eat it right away or store it for later use. 
  2. The Chop Chop Way: More effort, but better taste! Mince the garlic and micro-basil first, and keep chopping while adding your chosen nuts to the mixture. Continue until you get a fine blend, then add the lemon juice and olive oil. After they incorporate, sprinkle in the cheese and chop some more. Keep mixing the paste until the ingredients are spread out evenly. Once a fine paste is achieved, you can add salt and pepper and eat it right away, or store it in an airtight container for later use.
