Spot Prawn Lemon Pasta could be served hot or cold which makes it great for picnics and meals- on-the-go. Light and lemony with classic parsley and basil, this is sure to be a family favourite.

Ingredients

Pasta

  • 8 oz rotini pasta
  • 1 medium lemon, juiced and zested
  • 3 tbsp extra virgin olive oil
  • 1 tbsp capers, drained
  • ¼ c flat leafed parsely
  • ¼ c grated parmesan
  • 1 tbsp dijon mustard
  • ¼ c chopped chives

Prawns

  • 12 prawns
  • 2 garlic cloves
  • 3 tbsp extra virgin olive oil

Directions

  1. Prep your spot prawns (instructions here). Remove heads and peel tails.
  2. Cook the pasta to your desired consistency. Drain and set aside.
  3. Heat the oil on medium heat, add the garlic and stir until fragrant. About 1 to 2 minutes.
  4. Add the prawns in batches. Cook each prawn for 1 to 2 minutes each side or until pink and firm. It’s best to undercook rather than overcook.
  5. Mix the pasta ingredients and add to the pasta. Gently fold in the spot prawns.
