Ingredients
Pasta
- 8 oz rotini pasta
- 1 medium lemon, juiced and zested
- 3 tbsp extra virgin olive oil
- 1 tbsp capers, drained
- ¼ c flat leafed parsely
- ¼ c grated parmesan
- 1 tbsp dijon mustard
- ¼ c chopped chives
Prawns
- 12 prawns
- 2 garlic cloves
- 3 tbsp extra virgin olive oil
Directions
- Prep your spot prawns (instructions here). Remove heads and peel tails.
- Cook the pasta to your desired consistency. Drain and set aside.
- Heat the oil on medium heat, add the garlic and stir until fragrant. About 1 to 2 minutes.
- Add the prawns in batches. Cook each prawn for 1 to 2 minutes each side or until pink and firm. It’s best to undercook rather than overcook.
- Mix the pasta ingredients and add to the pasta. Gently fold in the spot prawns.
